In 1958 a 10 year old immigrant was amazed at the pioneering efforts of his parents as they struggled to make dry corn seeds into “Nixtamal” to convert into fresh corn dough named “masa”. The parents would rise at midnight and begin cooking corn and flour tortillas. The days were long and in the summer months the tiny tortilleria seemed to be the hottest place on earth. By 3:A.M. it was time wake up the older children to help in whatever needed to get done. Mechanization of tortilla products was limited, there were no cooling conveyors, no automatic counter stackers, but there were many people working in family clusters to make financial ends meet. The young immigrant was sent to college to learn the processes of modern America, to learn the marketing aspects, the communication tools for high tech. Eventually the immigrant helped design many menu items for several of the fast food operators including: Taco Bell, Del Taco, El Monterey, RJR Foods, Reser’s Fine Foods, S&K Industries, Discovery Foods, UK, Nila Foods, AUS.
