As a caterer and restaurateur in Los Angeles since 1990, Teri Valentine created a business based on the philosophy that foods should be handmade from scratch and from the absolute best quality ingredients available. We at The Perfect Bite Co. aspire to make every bite a memorable one. We started making Blueberry Lemon Cream Pastry Kisses for our corporate breakfast baskets and found ourselves overwhelmed with compliments on ?those little puffs.? With that, our kitchen team set out to create more varieties of our Pastry Kisses. Our Caramelized Onion & Feta became an immediate best seller. Customers were taking them home in our metal pans so they could bake them with the promise to return the pans later. All over town, we would run into customers telling us what a huge hit the Pastry Kisses were at their parties and that they still had our pans! We searched endlessly for disposable pans and had no luck- restaurant shows, Internet searches, etc. Finally Teri's husband John was talking to a customer about wanting to go to market with our Pastry Kiss line when the customer said he knew of the perfect tray and sent us a sample the following morning. In no time we were off and running!Holding firm to our commitment to produce appetizers that are individually hand made, we begin with all butter puff pastry squares and place them one by one in our oven safe trays. We then mix our all natural ? rbST free ? cheeses and whole eggs in small batches; small enough to keep the same exact flavor as the product we had always made in our catering kitchen. Our caramelized onions are cooked in real butter for hours until they are perfectly sweet. All of our pestos are stemmed by hand and mixed with fresh peeled whole garlic or ginger. Our cranberry chutney is the same recipe that our catering clients would wait for every holiday season ? the cardamom is just the right balance to the sweet cranberries, all hand made and cooked from scratch. All this handmade detail makes each Pastry Kiss uniquely different in appearance unlike the machine-made appetizers of our competitors. We are often advised to get our prices down but we refuse to substitute our high-quality ingredients. Anything less could never be called The Perfect Bite.The 2005 Winter Fancy Food Show was our first stop to gauge interest in our products amongst our peers. The response was overwhelming. In July at the 2005 Summer Fancy Food Show the NASFT named our Pastry Kisses a Finalist for Outstanding Product Line. Caterers, banquet chefs and hotels called and ordered and told us exactly what we wanted to hear; that our Pastry Kisses looked and tasted like they had made them in their own kitchens. Retail buyers tell us ours is the product they take home for themselves. Now that's The Perfect Bite.
